Went sat morning for few bad weather hours whitebass and crappie were biting

Whoa! That's the nicest WB I've ever seen come out of there. Of course, I haven't been in a while.

When I fish with my neighbor he always keeps the white bass. They're not bad. If you eat them fresh they are just like any other white flakey fish. They don't freeze well tho. Just make sure you trim the dark meat off the skin side of the fillet. Which is something I do with all fish even walleye.

Have posted this before but always willing to add a tip: when you filet a white bass(white perch as well), lay it(filet) skin down on your board/table, with a(sharp!) filleting knife, hold the tail end skin with a thumbnail or fork, cut to skin, then turn the knife edge upward at a slight angle and cut the filet to the front end. If you do this correctly(might take a few tries), the red meat(maybe 1/8" thick) will be left on the skin and you should have an essentially White filet! Trying to "trim" it off after skinning with red left on is usually not very successful. If you "scale and fry", for a crispy skin, you will end up throwing it out!
