1 serving size piece of fish makes about 3 soft taco's for a 8-10oz tortilla I personally use the frozen tuna steaks that come in in that size to about 1.5 servings, but certainly fresh can be used. Works well with Mahi too. This is for 3 taco's for me with rice its a dinner and lunch the next day. 1 medium or 1/2 large sweet onion 3-4 mushrooms 1/2 green pepper 1/2 red pepper 1 large clove of garlic 1 lime tuna steak paprikia salt pepper cayenne pepper thyme slice veggies and sautee with garlic for 2-3 minutes in olive oil over medium heat I lightly season the steak and add it whole to the veggies Cook the tuna 1-2 minutes per side or until it becomes opaque on the sides. I then crush the steak (which happens quite naturally) into smaller pieces and mix throughouly with the veggies, which allows for complete cooking of the fish. I know squeeze out the juice of one lime onto everything and reseason again with the 5 listed seasonings. Cook until tuna just turns opaque, but still should be tender and juicy. I cut some pieces of cheddar onto my tortilla add a few scoops of light sour cream and throw the tuna and veggies into the tortilla and top it off with some hot sauce. It tastes VERY sweet, is VERY light, and VERY low in fat and high in protein.
