pickled fish

  1. My wife bought me a new fish and game cookbook for Christmas. It has several recipes for pickled fish. Anyone ever eat it? Pickled tongue and heart are great, but never heard of fish!
     
  2. I've made 3 different batches of pike, steelhead and white bass. All were very good in my opinion. Don't know about about your book but everything I've read said to freeze the fish for at least a week before pickling.

    been a long time,but it's good.as for freezing,i believe that is only the case if you don't brine it first.it kills bacteria.but brining does the same thing,so no freezing is necessary.
