Pickled eggs anyone?

Easter's just a few weeks away. I like to leave mine in long enough for the yolks to turn purple.
I've been eating these since I was a little Lazy. :)

I always knew when my buddies wife made pickled eggs and he had eaten a few, especially on our way to Tappan at 5AM sitting in my truck.... 💩 :LOL:

I'll never forget when a friend that I've known since 5th grade bought a new 84 El Camino. One afternoon we're cruising and he let an SBD go. Silent but deadly for those of y'all that ain't hip. Chunky one. It literally smelled like something crawled up in him and died.
I found the window button on my side but it wouldn't work and neither could I open the door. That bistid had me locked in. If he wasn't a good friend of mine....

Just made a batch yesterday.
Peel and slice beets.
Add enough water and vinegar to cover the beets in a pot. About 3/4 water and 1/4 vinegar.
Add about 3-4 tablespoon of sugar.
About 1-2 tablespoons of salt.
About 1/4-1/2 teaspoon of black pepper.
Boil for 40 minutes.
Once cool, Add diced onion and the peeled eggs to your container and then add the beets and liquid.
Same recipe my mother used and I use. The brown sugar is an interesting thought.

Incidentally, I after the fall picking, I cut off the tops of beets and layer them in 5-gallon buckets of sand and store them in an attached, unheated garage. Keep the sand moist by sprinkling water on the sand. I picked some from the sand yesterday and most were just as good as they were in October.
That sounds like my Grama's ... Except,she added some Crushed red pepper & a few Clove spikes...

I always bought pickled eggs from time to time. My kids completely turned their noses up at them, as something "gross" that they wouldn't touch with a 10 foot pole. Just another unthinkable hillbilly and gross thing their dad would indulge in.

But then my wife, their sainted and revered Mother, started making them herself. All of a sudden pickled eggs were perfectly acceptable and good, and they started eating them.

The brats.

That reminded me of something. Back during my misspent, party hearty youth, we actually had a rating scale for fart quality! There were three criteria, "crispness", "scabbiness", and "hovering ability". Crispness referred to whether it sounded like a tuba, saxophone, or trumpet. Needless to say a blast rated high on the crispness quotient would rate rather low in scabbiness. Of course the scabbiness scale is exactly the opposite. SBD's usually rank really high. Hovering ability is self explanatory.

My 2 brothers and I ate moms eggs and maybe some beans. We'd pull our pants down, lay on our stomach across the bed, then pour baby powder in our crack....🔽 We graded the amount of "Puff". Three quick puff's we called a train....lmbo!

Made some boiled eggs in my Instant Pot pressure cooker. They came out perfect but I didn’t have everything to make pickled eggs. Pickled eggs are actually a pretty healthy snack…

The son of the owner of a tool & die shop I worked at got sent home one morning. He ate a dozen boiled eggs and a couple pitchers of draft beer the night before. I think there would have been an explosion if there was a spark near him. It was really nasty working that morning…

I was thinking....I wonder if you got one of those containers that you could hook up to a vacuum sealer and put negative pressure on the container if it wouldn't speed up the process ?

I started eating pickled eggs and beets as a small child. I started going to taverns with my dad when I was barley walking and they always had a big jar of pickled eggs on the bar, and I could always talk my dad into letting have one with my Neehi grape soda. I still enjoy pickled eggs but now I like them with a cold beer.
