Need help canning.

  1. Ok, i have lots of tomatos and peppers. The peppers are not hot. you guys have any recipes for these ingeredients ?
    Any info and tips will help thx.

    Using the tomatos you could make sauces, like pizza and spaghetti sauces.

    I found the following recipes in my "Ball Blue Book":

    tomatos:

    tomatos-whole halved or quartered
    tomato juice
    tomato sauce
    seasoned tomato sauce for spaghet. lasag. and pizza
    tomato garden juice blend (you could use the peppers in this juice)
    tomato catsup

    sweet peppers:

    green (sweet) peppers (you'd need a pressure canner for this one)
    pickled peppers
    cabbage stuffed peppers :eek:

    ... :eek: for the tomato sauces you'd need a food press or mill. They can be real expensive for the good ones with the crank. I dont have one yet.

    I would be happy to scan any of the recipes and post them for you. Also, there are good canning recipe books to be found at the library. I got lots of ideas from there. So far all the recipes Ive tried out of the Ball Blue Book have been outstanding. But then again I have only tried a few of the hundreds of recipes so far.

We can around 400-500 jars of fruits and veggies ever year. and also venision. It's nice to no you grew it canned it and you no what's in there wont hurt you. Be glad to help out.
