this is my personal rendition of the "waffle house" recipe,with a few minor changes. if you like waffle house,i gaurantee you'll like these.and they're lots cheaper 1 1/2 cups all-purpose flour 1 teaspoon salt 1/2 teaspoon baking soda 1 egg 1/2 cup sugar + 1 tablespoon 4 tablespoons butter flavored crisco(or 2 tablespoons each,butter and regular crisco) 1 cup milk 1/2 cup buttermilk 1 teaspoon vanilla Combine flour, salt and baking soda and stir to combine. beat the egg in another bowl and add sugar, butter, and shortening, mixing well until smooth. Add the milk, buttermilk and vanilla and mix well. Add the dry flour mixture to the wet mixture and mix until smooth. spray waffle iron wiyh non-stick spray, and preheat it. Spoon 1/3 to 1/2 cup of batter into the waffle iron and cook for 3 to 4 minutes or until the waffles are light brown. even a little better if you chill batter overnight,and let it sit out for awhile before baking. i make a batch or two,then freeze them.when i want a quick breakfast ,i just pull some out,and throw them in the microwave for a minute. toaster will make them a little crispier.
