Jerk Marinade from Hook and Book

  1. 4 red chillies (hot peppers), diced
    2 onions, diced
    1 large piece root ginger, peeled and grated
    60g (4 tablespoons) hot chilli paste
    125ml (4 fl oz) vegetable oil
    5g (1 tablespoon) allspice
    60ml (4 tablespoons) soy sauce
    5g (1 teaspoon) garlic salt
    3 bay leaves

    In a blender or food processor, blend the chillies, onions and ginger. If chilli paste is used then blend only the onions and ginger. Add all the other marinade ingredients and mix well. Rub over the pork or chicken and marinate over night.

    That recipe can be used for either Chicken or Pork. Also, the meat can be cooked in an oven or on a grill. I prefer the grill with a blend of apple, cherry and hickory wood. A nice Boston butt or pork tenderloin works well with this too.
