Tonite I deep fried cajun flavored walleye chunks and served with a southwestern jalepeno/lime tartar sauce. I also marinated crimini mushrooms in a sesame teryaki sauce, red skinned potatoes in italian dressing and grilled both, creating a nice smokey charcoal flavor and a perfect glaze of sweetness. Man was it ever tasty. :) :) The mushrooms tasted like candy! Complemented the viddles with an ice cold Bud Select. I ate so much I have been in a food coma since!

Will definitely repeat this international mix of flavors..mmmm good!! !%

No Problem Mike---it's not a family secret, yet!

Jalapeno and Lime Tartar Sauce

1 cup Mayonnaise
1/4 cup minced Spanish oinion
1/4 cup dill pickle relish
1 pickled jalapeno, seeded and minced (heat of choice)
Juice from 1/2 fresh lime (I prefer a little less so not to make too runny)
Salt and pepper (pinch or two to taste)

Mix all ingredients together and chill before serving

(Note: I use a little less lime juice and splash in a little pickle juice from the jalapeno for a little extra kick)
