help with jerky recipes

  1. I am looking for some recipes for making deer and beef jerky. I am looking for something that has a lot of flavor without being spicy since the family doesnt like anything spicy. I tried making some beef jerky with some prepacked seasoning i bought at bass pro but it turned out tasting a lot like hamburger and to be honest pretty nasty. Thanks for all your help
     
  2. a simple recipe I use is soy sauce ,brown sugar,little vinegar and minced garlic soaked overnight

    One of my favorites:

    2 1/2 lbs Beef
    1/4 cup soy
    1 teaspoon liquid smoke
    1/4 cup worcestershire
    2 teaspoon garlic powder
    1/2 cup teriyaki marinade. (I like Kens)
    2-3 teaspoons cushed black pepper. Tone it down to cut the spice.

    Marinate for 12-24 hours the longer the better.

    I like this one alot too:

    3 lbs beef
    4 tbl Vegetable oil
    1 cup soy
    2 tsp finely minced garlic
    3/4 tbl ground ginger don't use a full one because this stuff is strong
    5 tbl brown sugar

    Marinate for 12-24 hours the longer the better.

    Smokey Jerky:

    4 Lbs. beef cut to your liking
    1/4 cup soy sauce
    1/2 Tsp liquid smoke
    1/4 cup worcestershire sauce
    1 Tsp garlic powder
    1/2 cup catsup
    1 Tsp cracked pepper


    * I like to marinate the meat between 12-24 hours. I usually will try and cut my strips around a 1/4" thick. I hope that this helps.

  5. Worm Man & I are very close...I came up with this on my own by sort of using a recipe my daughter uses for flank steak & adding an idea or 2 of my own. It has gotten rave reviews, is VERY flavorful without being "hot". Here 'tis....

    4 lbs london broil sliced about 1/4" thick
    2 cups soy sauce
    1/4 tsp ground ginger
    2 tbsp minced garlic
    1 tbsp worcestershire sauce
    1 tbsp liquid smoke
    healthy sprinkle coarse ground black pepper
    sprinkle cayenne pepper

    Slice beef & marinate in above for 12-24 hours.
    I hang the strips from skewers in a 170 degree oven with door propped slightly open for 7-7 1/2 hours.

  6. I will have to agree with this one... all I use anymore... the cracked pepper and garlic is great!!!!!!!!

    this thread got me to wantin' to make some deer jerky, i used to make it pretty goood.


    1 deer roast cut into 1/4" strips
    2 tbs garlic powder
    1 tbs cajun spice
    1 tbs sweet smoky pepper
    mix it into the meat to coat it well, then add and mix in
    6 tbs soy sauce
    2 tbs worchestershire sauce
    2 tbs teriyaki sauce

    just mixed it up, tomorrow after work it goes into the oven, but for tonight, let the marinating begin:p

  9. 1lb venison (or meat of your choice) cut into thin strips.
    2 tblsp Morton tender quick
    2 tblsp Liquid Smoke
    1 tblsp Seasoned Pepepr (I usually add twice this for my taste)
    1/2 tsp Garlic Powder

    Mix all components in a freezer bag and let sit for 24 hrs. Dry in dehydrator or the oven proped open at lowest setting.


    I usually skimp a little on the garlic powder because I really like the seasoned pepper taste to pop.
