Quick and easy. You can put it over a salad, pasta marinara, baked tater. Make sure the perch is boneless. Cut into 3/4-1" pieces. Season with s&p, paprika and old bay. Chunk dice sweet onion and garlic.....enough to suit your tastes. In nonstick skillet, 1 tablespoon each of olive oil and butter. Med-hi heat, add garlic and onions till garlic is toasted. Add perch pieces.....make sure the perch is in contact with pan. Stir gently every 1-2 minutes. Perch is done in about 4 minutes. Cooked fast and hot, the perch doesnt fall apart and keeps it's flavor.
