cuban style gingered chicken

    i made this for Sunday dinner this last week and it was as good of a chicken recipe as i've ever had.i'm gonna this marinade on grilled chicken the next time i fire up the grill.
    btw,red beans and rice goes really well with this!

    Cuban style gingered chicken

    1 whole chicken, 4-6 pounds


    2 tblsp finely minced ginger
    3 cloves garlic,minced
    ½ tsp allspice
    ½ tsp cinnamon
    2 tblsp brown sugar
    ¼ cup chicken broth
    2 tblsp lime juice
    ½ cup orange juice
    1tblsp Worchestershire sauce
    2 tsp hot sauce
    1/4 cup finely chopped fresh cilantro
    2 tsp salt
    1tsp black pepper

    In a small bowl,combine all marinade ingredients.

    Place chicken in a large plastic bag.
    Pour marinade over chicken
    Seal bag and place in refridgerator for 8 hours to overnight,turning occasionally to evenly coat chicken

    Remover chicken from refridgerator 30 minutes prior to cooking to bring to room temperature.
    Preheat oven to 350 degrees f

    Remove chicken from bag and place breast side up in a roasting pan.dispose of leftover marinade.sprinkle chicken with salt and pepper.
    Place chicken in hot oven and roast 20 minutes per pound,or approximately 1 hour and 20 minutes for a 4 pound chicken.
    When done,internal temperature at the thickest part of the thigh will read 180 f.
    Remove chicken from oven and let rest for 10 minutes before carving
