Corny hush puppies

  1. 1 quart oil for deep frying
    1 cup all-purpose flower
    1 teaspoon salt
    1 teaspoon baking soda
    2 teaspoons baking powder
    1/2 teaspoon garlic powder
    1/2 teaspoon ground cayenne pepper
    2 cups yellow cornmeal, more or less
    1/2 cup chopped green onions
    1 cup fresh sweet corn or 1 cup canned whole sweet corn, well drained
    2 large eggs
    1/2 cup buttermilk
    2 tablespoons hot oil.

    Fill a 3-quart saucepan half full with oil and heat to 350. In a large mixing bowl, sift together the flower, salt, baking soda, baking powder, garlic powder, and pepper, Then stir to blend. Add the hot oil and stir. This stiff batter should be thick enouth to stay on a spoon without dripping off the sides. You may need to stir in more cornmeal if it's runny or milk if it's too dry. Very carefully drop the batter by teaspoons into the oil, and cook until golden brown, about 2 minutes on each side. The puppies usually turn over by themselves to cook the other side, but you might have to help them out a little ;) . Drain on paper towls and serve immediately.

    Makes around 3Doz.
    I never put the corn in it bc i dont like corn in it :D .
