Buckeyes the Candy

Discussion in 'OGF Kitchen' started by Blue Pike, Dec 18, 2004.

  1. 1 1/2 c peanut butter

    1/2 c margarine

    1 tsp vanilla

    1 16-oz pkg powdered sugar

    1 6-oz pkg semi-sweet chocolate chips

    2 tbsp solid shortening

Mix first 4 ingredients by hand to made a smooth odugh. (Dough will be stiff). Shape dough into small balls; place on waxed paper. Place in refrigerator. In top of double boiler, melt chocolate pieces and shortening. When smooth, put mixture in bowl. Use a toothpick to dip each ball halfway in chocolate. Store in plastic bag in refrigerator or freezer.

My wife and daughter made 10 dozen of them. :)

They used Baker's sweet chocolat bars insted of the 1 6-oz pkg semi-sweet chocolate chips and the doble boiler. To melt the Baker's chocolat they used the microwave and skipped the 2 tbsp of shortening. Saved a bunch of time. Sure do love them Buckeyes.
