Blackened Catfish

    Blackened Catfish

    4 catfish fillets
    olive oil
    1/3 lb. bacon

    2 teaspoons each of the following
    garlic powder
    white pepper
    black pepper
    cayenne pepper
    lemon pepper
    chili powder
    rosemary (crushed)
    fennel seed (crushed)
    1 teaspoon allspice
    1 teaspoon oregeno
    1/2 teaspoon salt.

    Fry the bacon, retain the grease (save the bacon for your hot slaw)
    Mix all the dry ingrediants. Rub the fillets in olive oil, then coat with dry mix. Drop the fillets in the hot bacon grease till they flake with a fork.

  2. OK, I'll add one for catfish that I tried a while back. Not sure if its already here so here goes...
    Thaw the filets if frozen, and then marinate them for a while in any Italian salad dressing...I used the Zesty one. Then make a simple foil pan and put a spoonful of olive oil to keep it from sticking. Then onto the grill or into the oven. I suppose you could use a non-stick spray or other vegetable oils but I use olive oil for alot of things anymore because it is mild tasting to me.

    "1 teaspoon allspice"

    Substitute with jamacian allspice (looks like black peppercorn) for more of a jerk flavor. Just grind it along with the peppers.
