I Troyes to sell bait and stuff right at the lake last year. Didn't work to well, usually I found out people get it at either a bait shop on they way or Walmart. Then just stop at mcds on they way to eat. I hope it works better for you then me and no I'm not meet saying just telling from havering it happen to me.

Now the food truck is a great idea they are hot items right now. Probly do better as just a food truck then a combo. Think of the people you'll ave coming there. You'll have worm gutted fisherman hands grabbing a pack of worms or minnows standing next to a city mom getting a dog for her kid. That's a real stomach turner to some people anymore. Also we all know how a bait shop stinks like fish and dirt. How many city people are going to get hot food from a stinky bait truck lol. I'd ditch the bait idea or see rate the two. Also does the health department know your going to have the bait and stuff in the same truck that your preparing food in? There's a high chance of cross contamination from the bait side to the food side. Heck I know in the restaurants I cooked in we couldn't even store chicken in the same fridge side as our other meats and veggies.

Please don't get in a uproar over my post I'm just trying to help you see some possible problems. That's alot of money to throw away if it don't work. 7 outta of every 10 food business fails in 6 months, but mix that with the overhead of the bait shop also you might spit money more then you take in.

Sometimes people that are starting a business get so excited and dreaming about the great possibilities of riches that we forget to look at the negatives and business hurting side of it.
Again I hope it works for you and you succede in you adventure. I really do.

Good luck! Maybe you need to be flexible in your approach. Find a place where you have good traffic for the early fishing crowd and all of the other yahoos just launching pleasure craft, switch to a spot to catch a public beach in the afternoon. Move to where they go to drink in the evening. Change your menu offerings accordingly.

What is it like to get permits for a state park? I could see you cleaning up at some place like Alum Creek Reservoir in the summer season.

I would be consistent on the times you are at various lakes (if you move around). A couple years ago, a guy was trying to sell minnows at the Neville ramp on the Ohio River. He said he was going to be there each weekend. I tried to buy my minnows from him the next week, but he wasn't there, had to turn around and drive back to Pt. Pleasant to get bait. Never trusted him from them on.

Check with each city and county you want to sell in. I'm pretty sure you'll need permits for each which will be costly. I'm just starting to get the ball rolling hear at the baitshop to open the kitchen for breakfast and lunch. Just the water testing, inspections and permits will run me over $2,000.I checked onto what your trying to do a few years back. You'll need to one hell of a recirculating, filtering, chilling and cooling system for you minnows or you'll be losing alot of money fast. Pure oxygen would be your best bet, but it still cuts into what little profit there is. Good luck and keep us posted on how everything works out......Mark

PS...better have a good amount of insurance to cover your butt in case someone claims they got sick or illness after eating off the truck.

Before you spend any money on this, you'd be better to get a hold of the state park office. They might let you do it, but I'd bet they are gonna want their cut. The concession stands used to be bid out, and the rights went to the highest percentage paying offer. One guy I know was paying around 7 percent, and that was from total gross.

Also, like has been mentioned earlier, consistency is key. Good luck!

Sounds like you need an app or twitter account so fisherman can find you if you are moving around.
