Default Grilled green tomatoes served over bunless burgers

As some of you green thumbs know, I stepped up and prepared my mom's garden for her following knee surgery. The garden is going well, considering the lack of natural watering, and it has provided me the opportunity to get creative in the kitchen.

I stopped by mom's house today to weed the garden and yield ready crops. While there, I concocted a fabulous dinner for my mother and her boyfriend that received pretty solid reviews.

I would describe it as grilled green tomatoes over hamburgers with a roasted reb pepper hummus.

Hummus recipe:
3 sections of jarred roasted red peppers
1/2 of one canned chipotle pepper
1 can (drained) of garbanzo beans
2 cloves garlic
1.5 tsp salt
1 tsp pepper
1 tsp cumin
olive oil to taste/texture

Mix all ingredients in a food processor/electric chopper

Chill until plating

Grilled green tomatoes recipe
Take one green tomato and slice in 1/4" slices
Drizzle with olive oil and balsamic vinegar
Salt and pepper to taste


Grill your burger in central heat and your green maters outside of them
Cook burgers to desired temp and when finishing, place tomatoes on top of burgers. Tomatoes should have grill marks and the olive oil/vinegar will have burned off/reduced.

When plating, place burgers (bunless) and slope the maters off of the side of the burger. Make a line of the hummus from top to bottom.

Add a piece of good bread to the plate, untoasted, and enjoy.

The meal is colorful and delicious. I served it with a salad with roasted corn basil ranch dressing. The dressing takes your favorite ranch dressing, roasted corn, two leaves of minced basil, and a hint of either lime or lemon juice.
