I am in the final stages of building my first smoker. Its a 225 gal tank with a offset smoke box and a warming box. I figure to be able to do 4 pigs at once in it ...I fired it yesterday and held 230 on 5 of 6 thermometers for 10 hours. The one thermo that as off was due to a error in planning but it only went to 240 degrees. Since then I have fixed the problem (i hope)..I'll post pics after paint.

Nice hold on the temps. Did you get the temps stabile and it held that long without adding to it?
I have a small offset style that is just not big enough for some smokes. I have been reading about some home builts and looking online at some of the small trailer models. Some day...............

I added to it but the temp never went below 200 and once it spiked to 260 263 ish.

Post some pix of you smoker. We build some nice ones on trailers and always enjoy seeing other people designs. Raider

I've made nine now for myself and a couple of friends but still have nothing on alot of the smoker i've seen online. Check out the forums section of www.thesmokering.com for tips, tricks , ideas, recipes and plans. It just about the best BBQ/SMOKE site i've seen.
