I'm cooking salmon tonight for dinner and just wanted to try something different, just looking for ideas.

I made some this past weekend. It was simply some seasonings (salt, pepper, rosemary and a squeeze of lemon juice) and baked in the oven. Everyone loved it.

However, if you're thinking about grilling I'll dig up another recipe I used before.

thats usually how I cook it,in the oven that is, and I hanen't drug out the grill yet. My ex wife used to steam it and was some of the best I've ever had, I just cant remember what kind of seasoning she used. I was thinking of spicing it up a bit this time.

the wife always raves when i make salmon. i'll simply use montreal steak seasoning and old bay, a little lemon juice. fire up the grill nice & hot. i cook it skin side down first for 5 mins, then gently flip it and cook it the rest of the way. about another 5 - 10 mins depending on the thickness & heat of the grill (obviously). but we like it so it's not completely cooked through (but blackened around the edges)....kinda like medium-well.

careful on the grill, it's gonna want to fall apart.

i usually do this on the gas grill, but when i have extra time i'll do it over a mixture of apple & mesquite. it's really nice.

dang, i love salmon.

Blasphemy. I never put my grill away. I grill out twice a week, winter, spring, summer, and fall. I'm gonna grill out a pork roast tonite.

The Jack Daniels salmon went something like this. (This might work (glaze up) under the broiler.)

Each ingredient needs "just the right amount". :D Sorry, I got the ideas from recipes and pretty much wing it from there.

Minced shallots
Minced Garlic
Olive Oil
Jack Daniels
Soy sauce
Brown Sugar
Lemon juice
Salt (go easy since the Soy is salty)
Pepper

I marinated the salmon for a couple hours then brushed on more as it grilled. Grill it to your preference.

I'll tell the way I like to cook it and have never had a complaint, even from professed salomn haters.First I recommend you skin the filets and set out on a plate for a while to reach room temp. Salt and pepper lightly and about a teaspoon of lemon juice evenly over each filet. Melt about 1/2 lb. butter in a pot and add a packet of Good Seasons dry Italian Salad Dressing mix. I add to this about 2 tablespoons lemon juice and, I prefer, a fair amount of garlic powder and a little Tony Cacheres dry cajun spice. You can, of course, ad spice to your taste. I use this to baste the filets on the charcoal grill. I like to put the fish in one of those hinged fish cooking things with the handles, keeps the filets together and allows for easy flipping. The real key is to cook the fish HOT and flip often, no more than a minute or so on each side before flipping and baste the fish right after you flip and close the lid. You want HOT and FAST. It takes about 6 minutes to cook good sized filets you'll know when it is done. You may want to flip and baste more often the closer it gets to being done. I promise you will enjoy this fish.

wow!! thanks for the ideas guys they all sound good, although I am kinda partial to old bay and jack daniels any way. I think I'll try some old bay garlic jack daniels (on the side) butter and a little steak seasoning.I'll let you know how it turns out. thanks!

YUM! YUM! I took some butter and melted it with some garlic brushed it on the fillets then rubbed them down with some old bay and steak seasoning and sprinkled lemmon juice over them, put em on my grilling rack for about 3-4 minutes per side and they were delicous. I could eat fish every day if my freezer wasn't empty, I'm going to take care of that this weekend, I hope!

i earn a living as a chef here's a good dish: you will need salmon,angel hair pasta,capers,anchovies,crushed red pepper,fresh garlic,maranara sauce,diced onion.
1.grill the salmom to temp. of choice
2. cook the pasta and drain
3. saute the capers,anchoive,garlic, crushed red pepper and onion, add the pasta and toss, add the sauce. just use enough sauce to coat the pasta. toss again.
4.pour the pasta in a bowl,put the salmon on top garnish with fresh parmesan and italian parsley.the dish is called Salmon "putunesca". italian dish S+P to taste

PLEASE USE FRESHLY GRATED PARMESAN AND THE THAT CRAP IN THE PLASTIC JAR. graters are very inexpensive.
