Anyone know any recipes for blackened catfish? I really love having this at Cracker Barrell and want to know how to make it. I also love blackened grouper sandwhiches. Thanks for any ideas and input, Skip

it's really easy but you will probably want to do it outside on a grill since there's alot of smoke!
this is how i was taught to make it.
use a large cast iron skillet
put in on the grill over high heat
melt a stick of butter or margerine in a bowl big enough to put a couple of fillets in
dunk the fillets in the butter then coat them with the blackening seasoning(so it will seal the fillets and the inner moisture will cook them).
put a couple tablespoons of butter in the skillet & melt
place the fillets in the skillet,blacken on one side then turn them over and blacken on the other side.
this is great with walleye and grouper too!!

it's about as simple as jeffmo put it.if you want to make your own seasoning,there are plenty of recipes.just google up blackened catfish for those.
but the cooking is basic.2-3 minutes per side in a hot cast iron skillet.just be careful when you toss the butter in,cause it could possibly flame:eek:
and as jeff said,OUTSIDE :D

BLACKENED FISH
Ingredients
2 TBSP PAPRIKA
1/2 TSP THYME
2 TSP SALT
1/2 TSP OREGANO
1 TSP ONION POWDER
1/2 TSP ROSEMARY
1 TSP GARLIC POWDER
1 TSP CAYENNE PEPPER
1/2 TSP WHITE PEPPER
1/2 TSP BLACK PEPPER
BUTTER, MELTED
6 - 8 FISH FILLETS
Instructions
1. COMBINE ALL SEASONINGS (EXCEPT THE FISH AND BUTTER )
PREHEAT SKILLET TO 500 DEG.( IT CAN NOT BE TOO HOT )
DIP FISH IN BUTTER AND COVER WITH SEASONING. PLACE INTO SKILLET SEASONING SIDE DOWN.
2. COOK FOR APPROX 2-3 MIN. ON EACH SIDE.
It's best fixed outside like misfit suggested. Set a large cast iron skillet in a bed of hot charcoal and let it get hot before starting. The skillet can not be to hot.

There is a great seasoning sold in many stores called Blackened Redfish Magic. I have used it many times on cod, etc.
The only bad thing about blackened mixes is all the salt. I use the same recipe as lazy minus the salt. Good Stuff!!!!!!!

Tried the recipe with the butter and Redfish Blackened Seasoning....I tell you what....the wife and I loved it...can't get any better than that.
