14 crushed peppercorns
2 large bay leaves,crushed
1/2 teaspoon dried dill weed
1 teaspoon celery seed
2 teaspoons roasted garlic,minced
1 tablespoon salt
1/4 cup soy sauce
1/2 cup extra virgin olive oil
3/4 cup tarragon vinegar
2 cups shallots,minced
3 cups onions,finely chopped
4 sirloins(elk,deer,beef,etc)
combine all marinade ingredients in a large saucepan.bring to a rolling boil,reduce heat and simmer for 5 minutes.place meat in a baking dish with flat bottom.allow marinade to cool.pour over meat,cover and refrigerate over night.remove meat and pour marinade into sauce pan and bring to a boil.boil for at least 5-10 minutes until marinade is reduced by 1/4.remove from heat and serve with meat later.grill meat to your preference.
this recipe came from a lewis & clark cook book that my daughter bought for me.i've used it on elk,deer and beef and it has always turned out pretty darn good!
